RECIPE: TOMATO MADNESS!

This happened during the Creole Tomato Season in the south. I went on a multi-week tear about making pizza with fresh tomatoes that have been marinated in olive oil with basil, garlic and salt. One reader emailed me to say these tomatoes would make a stale saltine taste fantastic. And man, is this simple. This pizza happened spontaneously last spring, and my phone just reminded me I was dabbling that day. So, I thought I would share. This was a kick in the pants to one of our favorite topping combos from our time in Los Angeles. We walked into our favorite neighborhood dive bar and sat down to order dinner. We noticed Omar, the cook, sitting at the end of the bar eating a pizza that wasn't on the menu: Pepperoni and fresh jalapeños. We asked the bartender, "Will he make that for us?" She said sure. He did. It was good. And now, I'm thinking of that day as I remember this little number. I had stuff that needed to be used, including dough, fresh Serranos and some lemon.
